It’s pouring with rain and I hope you didn’t get too drenched on your way to work this morning. *sigh* That’s just me wishing wishing it would rain already! Nairobi is soaking…sorry…searing hot!!!!!
Anyways, that doesn’t stop me from enjoying a nice meal of oreo no-bake cheesecake, omnomnom! And because I also want you to, here’s the recipe:
You will need:
45 oreo cookies (1,5 packages/350 each) At this point I am tempted to dunk 😉
1/4 cup melted butter
3pkg of 250g cream cheese (softened)
1/2 cup sugar
1 tsp vanilla
3 cups cool whip topping (thawed)
Line 13*9 inch pan with foil. Make sure there’s some foil extending over the sides. Coarsely chop 15 of the cookies and set aside.
Finely crush the remaining cookies and mix with butter. Press firmly onto the bottom of the pan and refrigerate.
For the filling: blend the cream cheese, sugar and vanilla in a large bowl until well blended. Gently stir in whipped topping and the coarsely chopped cookies. Spoon over crust and cover.
Refrigerate for 4 hours or until firm then you can begin your munch!
